Wow, such a loaded question! Hmm... Metroids! As far as bosses go...hmmm I'd have to say Mother Brain from SM, because the fight is reasonably difficult yet fun, not to mention the totally EPIC battle theme. I also hate her for killing the Baby Metroid.  Easiest boss fight? So far I have to say Spore Spawn from SM. Seriously. I've taken maybe 20 points of damage from that thing. Ever. It's simple, you just ball up in the corner and pop up and fire a missile when the thing opens. Hardest boss fight so far? I'd have to say Metroid Prime, Mother Brain in ZM, Phantoon in Other M, quite a few in Fusion, and that FREAKING FREAKITY FREAK FREAK FREAKING BOOST GUARDIAN!!! kjmnsadvkjnfaldkjf I finally beat that thing after 8 tries...WOW!

For me my favourite metroid enemy are the space pirates all types of them. Closely followed by the ing which i love as they can corrupt any lifeform even space pirates.

Like the Kihunters. When I first played Super Metroid, my friends and I called them "Piston Shit-monkeys". (don't ask) Also like Sidehoppers, Desgeegas, Cacatacs and Beetoms.
In the Prime series, I really liked the Rezbits.

I really love the Ing and Space Pirates, but all my love for the less terrifying enemies goes towards Yards. Yes, the tiny little steel shelled snails in Maridia. I used to call them Clatter-Cans because of the sound they made when you kicked them. Next to that I love Mochtroids and Chute leeches. I remember going through great lengths to not kill any of the aforementioned creatures in my Super Metroid adventures because I loved them so much.  But now that you mention it, Infinity, I love the Rezbits, too. Such an interesting creature design. There's a lot of awesome creatures in all the games, but the ones I mentioned seem to resonate with me the most. c:

After playing Metroid 2, I love fighting Zeta Metroids. They're probably the hardest non-boss enemies in any Metroid game, and they're a blast to fight due to how fast they are and how small their weak spot is.
Omega Metroids were such a disappointment. Too slow.

My favorite Metroid enemy is the Omega Metroid. 
Phazon,you can run from it,but you can't hide from it.

Kraid is amazing. He's such an epic boss he takes two whole screens! The cruelest thing in this world is that he hasn't been in a game since Zero Mission. 
 ~Kraid is best character and Other M is a great game.

I like all variations of Metroids.
The Prime version of Space Pirates were the best. Echoes and Corruption didn't quite do it for me in terms of Pirate designs.

I'm not a fan of "obviously" playing Simon Says with video game enemies, so that automatically cancels out nearly all of the Prime Trilogy's Space Pirates. The standard ones are fairly neat, though. My all-time favorite, though, is the entire Metroid species.
Also the zoomers/geemers. Those guys are like intergalactic cockroaches.

Grenchlers. I initially hated them... Well I still kinda do, so it's more of a love-hate relationship, but that's not the point!
Grenchlers are unique to me in that they're more like dinosaurs or some other real-life apex predator, not just some bald tribble with anger management issues that pesters you in whenever you enter their line of sight. Grenchlers are HUNTERS. They run, swim, and leap after you so they can crush your body with powerful jaws, again like an apex predator.
What I'm getting at is most enemies in the Metroid series are Space Pirates, Metroids, or little critters that look like insect-reptile hybrids. Sheegoths and those dog-like things from Fusion's nocturnal sector also apply to this thought of mine as well. We need more "mammalian-esque" creatures to fight in the series.

I don't know... It's a toss up between Rezbits, Emperor Ing, Dark Samus, Metroid Prime (both forms), Mother Brain (Super Metroid), Quadraxis and Ridley (From Metroid Prime 1 and 3 [except Omega Ridley] and Super Metroid).
